Congrats to our business card drawing winner!

Try Chef Lane's creation right in your own kitchen! The ingredients are available right here in Lincoln and each dish is simple to prepare.

Lemon Smoked Paprika Marinated Lamb T-Bones
with Charred Potato-Leek-Fennel Hash


Serves 4
Ingredients:
For the Lamb:
8 each Lamb T-Bones (preferably from locally raised lamb)*
2 each Lemon, zest and juiced
2 cloves fresh garlic rough chopped
2 Tbsp Chopped Fresh Rosemary
2 Tbsp Extra Virgin Olive Oil
1 Tbsp Chopped Fresh Parsley
1 Tbsp Smoked Paprika (Spanish or Hungarian)*
Kosher Salt and Pepper to Taste
*For this recipe we used ingredients that are available in Lincoln. Some of the specialty items are available at Leon’s, Ideal, or local Middle Eastern Markets.

Method of Preparation:
Place all ingredients excluding the Lamb and salt and pepper into a bowl, mix well with whisk. Place Lamb t-bones in the marinade, cover bowl with plastic wrap and place in refrigerator, let marinate at least 2 hours preferable overnight. To cook the Lamb, season the meat with salt and pepper and place onto a pre-heated grill over medium high heat, giving the lamb 3-4 minutes per side depending on thickness of lamb and size of chop, I prefer mine to be medium-rare. Another option on the Lamb is to sear the lamb 2 minutes on each side in a cast iron pan over medium high heat on a burner, and finish the meat in a pre-heated 415º oven for an additional 2-3 minutes of cook time.

For the Hash:
3 each Yukon Gold Potatoes, cut into rough large dice, roughly 8 pieces per potato
2 cloves Fresh Garlic rough chopped
1 cup fresh fennel, cut julienne or diced
1 cup fresh leek, cut julienne or diced (use the white and light green part only)
1/3 cup Roasted Red Peppers cut julienne or diced
2 tbsp fresh oregano minced
1 tbsp fresh rosemary minced
1 tbsp fresh Italian flat leaf parsley minced
1 tbsp fresh mint leaf minced
2 tbsp Extra Virgin Olive Oil
Zest and Juice of 1 lemon
1 tbsp Smoked Paprika
1 tbsp Canola or Soybean oil
Kosher Salt and Pepper to Taste

Method of Preparation:
Dice the potatoes and place into salted boiling water for 9-12 minutes depending on size of dice. You want the potato to cook and soften slightly, but not cooked enough as to mash. Once potato is cooked drain and set aside. In a cast iron pan or on a griddle cook-top over medium to medium high heat add the soybean or canola oil. To this add the potatoes and let start to char stirring occasionally every 2-3 minutes. Once potatoes have starting to take some color and char flavor add the fennel, leek, and garlic to the mix, again stirring occasionally every 1-2 minutes to develop char flavor and color. Once the fennel and leek have starting to become softened (around 5 minutes) add the roasted red peppers, cook for an additional minute, just to warm the peppers. Remove the hash from the pan or cook top and place into large bowl, add the fresh herbs, lemon zest and juice, smoked paprika, extra virgin olive oil, and salt and pepper into the bowl and toss to mix. Serve with the Lamb and Great Wine.

Add yearly membership to the Nebraska Golf Academy for $250, ($100 additional for each family member).

Regional Membership:
Purchase price: $1,300

Requirement: Must live outside 30 mile radius of Wilderness Ridge and be a member of your home town course. Spouse added for $420; children up to age 23 added for an additional $200 per child, two or more children, $400. Add yearly membership to the Nebraska Golf Academy for $250, ($100 additional for each family member).


Corporate Memberships
Small Business Corporate Executive:

Purchase price: A minimum of two memberships must be purchased. Open to any Nebraska Corporation actively engaged in legitimate business. Wilderness Ridge reserves the right to deny any corporation membership under this category. Cost beakdown as follows: $2,500 for a single; $4,800 for two ($2,400 ea.); $7,050 for three ($2,350 ea.). Additional memberships may be purchased for $2,250 ea. Any seniors (55 and older) included among the corporate members will receive an additional 15% discount. Spouse may be added for $700 and families (children up to age 23)for an additional $200 per child, two or more children, $400.

Large Business Corporate Executive:
Purchase price: $5,000
Open to any Nebraska Corporation actively engaged in legitimate business. Wilderness Ridge reserves the right to deny any corporation membership under this category. A minimum of 10 memberships must be purchased. The cost for each membership is only $1,500 and includes all rights and privileges associated with a full membership. May purchase up to 30 memberships.

Valentine's Day a Success

There has been so much anticipation for Valentine's Day here at The Lodge and I'm excited to say that the weekend went fabulously! We decided to pull out all the stops this year and try a lot of new things and the extra preperation really paid off.

Each table had a single red rose and many guests who called for reservations ordered multiple roses for their sweetheart to take home. Those who pre-ordered roses arrived to find the flowers waiting at their table, helping many a man look like the practiced romantic!

We had a special drink feature that was a huge hit with couples. The name of the wine we featured was Primo Bacio which means 'first kiss'. The romantic reference and wonderful flavor made this a favorite at many tables.

I'm also happy to announce that we had two proposals at The Lodge on Valentine's Day! I wish I would have had a camera handy to snap photos of the lovely couples. We may be seeing them again soon using the Wedding Island or Yellowstone Ballroom.

Finishing touches

We've started getting the room ready for the Private Fireside Romance Package! We booked up quickly so we've also decided to offer the package throughout the entire year. Soooo....if you are looking to take your special lady friend out for a romantic evening you can have a private room all to yourselves. It's also great for engagements!

Leprechaun Chase at Wilderness Ridge!

Eagle Club membership catching on

Besides managing the digital communications here at Wilderness Ridge I'm also heading up our newest membership, The Eagle Club. The Eagle Club is a business membership that encompasses all areas of Wilderness Ridge; including banquets, golf, and dining. Some benefits to becoming an Eagle Club Member include:

- Room rental waived Monday through Friday morning (minimum food requirements must be met)
- Audio/Visual fees waived on Lodge-owned equipment
- 25% discount on golf and cart fees for member only (Monday – Thursday)
- 15% discount on golf for guest playing with member (Monday – Thursday)
- One free golf pass per year for member and up to 3 guests
- Tee times taken up to ten days in advance
